Task: Cooling of chocolate in the cooling tunnel
Chocolate molds are filled lengthwise with liquid chocolate in a dosing station.
The chocolate molds then need to be cooled for a defined period in a 25-meter-long cooling tunnel. The temperature in the tunnel is a minimum of 6°C.
In the cooling tunnel, the molds must be transported in a transverse direction, with four molds forming a row.
There must be no gaps between the molds to achieve optimal tunnel filling and to comply with the necessary process parameters.
When fully loaded, the belt in the cooling tunnel is subjected to a load of approximately 1,200 kg from the molds.
Additionally, the conveyor belt structure must support the cooling tunnel, which has a total weight of 1,500 kg.
The molds must remain in the cooling tunnel for approximately 45 minutes. During this time, the cold air must reach all sides of the mold as effectively as possible.
The molds must be fed behind the cooling tunnel to a knocking station, which removes the chocolate from the mold.
